Yup, they're great family meals and a lot of them are easy to sneak in some vegetables as well. :)

My husband and my grandson generally do not like veggies and fruit (a couple exceptions maybe). It is very difficult to make something healthy that everyone will eat. Everyone is making meals for themselves. So, at one point I stopped buying fruits/vegetables - why bother shopping for myself only, right? Well, i think I need to start meal planning to see how can I change that and eat together as a family, even if it is only a couple of weeknights. Baked potatoes, spaghetti, pancakes- these can perfectly work for us. Thank you for the ideas.

Stir-frys are super easy, if you have pre-cooked chicken or pork (I have some in the freezer and home-canned). While the rice is cooking (my cooker takes about 10 minutes), thaw or open the chicken, pour some sauce in and load it with a frozen veggie mix or all the fresh veggies that need to be used up!
