					<description><![CDATA[Congratulations on 11 years. We&#039;re coming up on 12 years next month. Can&#039;t wait. I know I have been really slacking on the recipe for zucchini casserole, so here you go: &lt;br /&gt;&lt;br /&gt;1 lg zucchini, peeled, seeded, cut into 1 inch squares&lt;br /&gt;1 1/2 pounds ground beef, lean&lt;br /&gt;1/2 t basil&lt;br /&gt;1 small onion, minced&lt;br /&gt;1-2 garlic cloves, minced&lt;br /&gt;salt &#038; black pepper to taste&lt;br /&gt;1 lg can tomato sauce&lt;br /&gt;2-3 slices toast, really done&lt;br /&gt;1/4 lb cheddar cheese, shredded (or use how much you want)&lt;br /&gt;&lt;br /&gt;Peel &#038; cut up zucchini into 1-inch cubes. Steam until like consistency of mashed potatoes . Set aside. Brown beef with onions, garlic, basil, salt &#038; black pepper. Drain fat. Butter medium casserole dish. Put meat mixture on the bottom, then zucchini, then toast. Repeat if you have enough like a lasagna. Top with can of tomato sauce and finally the cheddar cheese. I use a really large can of sauce, otherwise it&#039;s really dry. Bake at 350 degrees for 1 hour, covered. Take cover off, bake another 10 minutes to brown the cheese. &lt;br /&gt;&lt;br /&gt;I hope you like it. I always wish my birthday was at the end of the summer,instead of late fall, so I could have this every year for my birthday. Then I discovered the art of freezing fresh veggies.
