I am getting back on the ball. I’ve been off the ball for about 4 months. But, hey… it waited for me. 🙂
Anyway, here’s what’s on the meal plan for the week:
Monday: Chinese Chicken Salad (Bountiful baskets gave me some cabbage)
Tuesday: Eggplant Parmesan (Bountiful Baskets gave us some eggplant too… can you tell?) — This one gets lots of good reviews and I like how it’s not breaded and fried.
Thursday — I work, I figure Drew will do something with rice (he went to Korea on his mission)
Friday — out to dinner to celebrate the new school year (yay!)
Saturday — dinner at a friends, not sure what I’m bringing.
I also have a pasta salad on my mental back burner. I really need to make the salad and the eggplant stuff though, since I don’t want that produce to go bad.
I need to start combing for new recipes. BUT, it’s all about baby steps. Am I right? 🙂
