Ok, I tried this, just because I’ve heard a LOT of good things about roasted cauliflower lately. It’s not a vegetable that my kids take a shine to, in general. Plus, cauliflower was on sale the other day at Sprouts. Anyway, here it is — Roasted Cauliflower Pasta.
I really like the bland nutty-ness of the cauliflower (they weren’t kidding, roasted cauliflower is a lot better than raw stuff, which I actually don’t mind), along with the green olives and the Parmesan shavings.
The kids couldn’t get enough. I had to cut them off so they would go to karate. They did say it was a little spicy at the beginning. I didn’t add a whole 1/2 tsp of crushed red pepper, but pretty close.
It didn’t take long, and it wasn’t hard. I think the only thing I’d do different is maybe try some whole wheat pasta next time. I will share that I don’t usually end-up buying whole wheat pasta, just because regular pasta is so much cheaper. But, because there isn’t a ton of protein (although there’s a good amount of Parmesan) whole wheat might make it a little more well-rounded.
